Low carbohydrate vegetables for diabetic diets
This low carb vegetable is an intelligent addition to a diabetic diet because it is loaded with folate, beta-carotene, iron and vitamin K. To obtain the greatest nutritional boost, get rid of canned foods and buy them fresh or frozen. Steam spinach in an egg omelette for breakfast or mix fresh leaves in a healthy, low carb salad for lunch or dinner.
Tomatoes, another super food for diabetes, are full of vitamin C and are good sources of vitamin A, potassium and fiber. They are also low in carbohydrates and low in calories: only 32 calories per cup. The lycopene nutrient, which gives color to red tomatoes, is a powerful antioxidant and can protect against heart disease and prostate cancer. Add a slice of juicy tomato to your next sandwich or prepare a large pot of tomato sauce, an excellent dressing for vegetables, chicken and other good foods in your diabetic diet.
If you are not eating broccoli yet, be sure to add it to your diabetic diet. It is low in carbohydrates and is loaded with vitamins A (beta carotene), C and D. It also has calcium, fiber and iron. The American Dietetic Association (ADA) says you should look for florets that are packaged and that are dark green and do not yellow. Eat broccoli shortly after buying it. Consider including raw or lightly steamed broccoli at the source of your next party instead of fries.
Cucumbers are a fresh, crunchy, low-carb option for people with diabetes: a generous serving of a cup has less than 5 grams of carbohydrates. You can fill up on this low carb vegetable without worrying about raising your blood sugar too much. Cucumbers are a good source of vitamin K and also contain potassium and vitamin C. Keep in mind that cucumbers are not just for salads in a diabetic diet. Consider adding thin slices to sandwiches or wraps.
