Garlic is safe. It has been used for 5000 years by historical civilizations, including the Egyptians, Greeks, Romans, Native Americans, Japanese and others. It has been used for health effects in: the heart, arteries, cancers, the respiratory system and many others. There have been many epidemiological studies on its impact on health.
The Office of Complementary Medicine of the National Institute of Health has a synopsis that says it is clearly safe, but that the evidence on the improvement of health is not clear.
Garlic, like glutathione and acetyl cysteine N, contains sulfur. Alisine is the active compound. There are also other compounds that do not contain sulfur (like FruArg).
This video covers the article in the journal Nature on the impact of AGE (extract of aged garlic) on the inflammatory response caused by lipo-polysaccharide. According to the authors, 2/3 of the expression of the inflammatory mRNA gene was decreased. FruArg decreased 55%.
